Sour Cream Berry Muffins


Yup! Sour cream again! Told you I'm crazy with recipes that has sour cream in it..hahaa now you know how crazily I am over it.

Made these muffins a couple of weeks ago but never got the time to post it in.  So here goes.  (I don't have to tell you how soft and del-iiii-cious they tasted. wink! wink!)

This is the 2nd recipe that I tried from this wonderful book.  2 recipes down, 748 more to go! Wow, a whole lot of muffins to bake!





Makes 15 muffins

2 cups all purpose flour
1 cup granulated sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 eggs
1 cup sour cream (yum yum!)
1/2 cup vegetable oil
1 tsp vanilla extract
1 1/2 cups raspberries, blueberries or blackberries (I used blueberries)

Pre-heat oven to 200d C.
1. In large bowl, whisk together flour, sugar, baking powder, baking soda and salt.
2. In medium bowl, whisk together eggs, sour cream, oil, vanilla until well blended.
3. Add the egg mixture to the flour mixture and stir until just blended. Gently fold in berries.
4. Fill batter in muffin cups and bake for 20 - 25 mins until done.  Transfer to wire rack and cool completely.

  3. Totally agree with you that sour cream always make cakes or muffins very yummy. For healthy reasons, I use to replace it with yogurt but now prefer to stick to the recipe if the recipe contains sour cream :D

    Love your muffins. They really look yum yum!

  9. I've always been curious to try sour cream, but I haven't yet (in Italy it is not so common, we have to make it by ourselves). But your muffins look soooooo good that I cannot wait any longer! I'll make both!

  15. so far i tried only 1 recipe fr this book. but not sour cream recipe. must try with sour cream lah, sure tasty & moist eh! eat this with kopi. sedap eh!

  22. these look wonderful !! i used sour cream and yogurt interchangeably and i like your muffins that has risen up to a nice height. wow, 750 muffins!! that will take years to complete!! i now wonder if you and your sis will have this crazy idea to complete all the recipes from this book..LOL!
