It's Saturday night and since poor hubby is at work till late today, decided to entertain my children and my brother-in-law who dropped by for dinner, to a bowl of freshly popped popcorn. See how fluffly it is!
It's very easy to make. Here's how.
Popcorn:
1/3 cup oil
1 cup corn kernels
Heat up the oil in a heavy pot until smoky. Put in 3 to 4 corn kernels and once it started to pop, add in the rest of the corn kernels and take it off heat and wait till the kernels start to pop. Wait for about 30 seconds, then put the pot back onto the heat with the lid on. You will hear more popping. Give the pot a good shake every now and then so that it will pop evenly and not burn. To get the popcorn crispy, leave the lid a little ajar so that the steam can escape and not make the popcorn soggy. Once the pops stop, pour it into a big bowl and add the caramel. Stir well and let it cool for a while before you serve.
Caramel:
20 g butter
1/4 cup brown sugar (adjust as desired)
1/4 cup corn syrup (adjust as desired)
Put all ingredients in a pot and let boil till it caramelized and slightly thicken. Keep on stirring so that it will not burn. Once done, take it off heat and it's ready for the popcorn.
